Taiwanese Fried Chicken
- 200 gramtapioca flour
- 200 gramchicken breast
- 1 tbspcorn starch
- 3 tspsalt(1 tsp each for batter, marinate and spicy powder)
- 1 tsppepper
- 2 tbspsoy sauce
- 1 tbspchilli powder
- 1 tspgarlic powder
- 200 mlcooking oil
- 1 pc(s)egg

Making the batter
- Get a bowl, add a tablespoon of corn starch, 2 tablespoons of soy sauce, crack an egg and seasonings; salt and pepper. Mix it well.
Marinate the chicken
- Get a piece of chicken breast. Cut the chicken breast, and butterfly them by cutting them in half horizontally. It’s important to smash the chicken breast with the backside of a knife. The function is to make it thinner and tender.
- Mix the chicken with the batter until all covered. Put them in the fridge, and marinate for 30 minutes.
Making the fried chicken
- Get a bowl, put the tapioca flour, and add a teaspoon of salt. Mix it well.
- Take out the chicken from the fridge. Mix the chicken with the tapioca flour. put the chicken in the tapioca flour, and coat well. Shake off excess flour.
- Get a pan and pour the cooking oil. Turn on the fire with medium heat. Deep fry the chicken. The cooking oil temperature should be about 350 degrees F (175 degrees C).
- Flip it a few times until golden brown and cooked. Approximately 6-8 minutes. Take it out from the pan and set it aside.
- Let the chicken rest for a while. Now we can prepare the spicy powder. Get a small bowl, and add a tablespoon of chilli powder, mixed with garlic powder and salt. Mix it well.
- After the chicken is cooked, then move it to a plate. Cut it into a few pieces, and sprinkle the spicy powder on the top. Now, Taiwanese fried chicken is ready to serve!
