Taiwanese fried chicken is a very popular street food in Taiwan. Usually, this food will be easy to find in the night market. Because this food is very famous, delicious and easy to make, it finally spread to many Asian countries.

This Taiwanese fried chicken is marinated with soy sauce and some other spices for a long time so that the spices are absorbed well into the chicken.

After being marinated, it’s coated with tapioca flour which makes this chicken special and different from other fried chicken. The tapioca flour makes the chicken crispy in a unique way.

Additional notes:

  • The chicken must be cooked in hot oil. The ideal temperature to fry chicken is 350°F/175°C
  • The chicken should've been deep-fried in the hot oil, but In this recipe, I used 200ml of cooking oil and pan fry.

ingredients

  • Taiwanese Fried Chicken

    • 200 gramtapioca flour
    • 200 gramchicken breast
    • 1 tbspcorn starch
    • 3 tspsalt(1 tsp each for batter, marinate and spicy powder)
    • 1 tsppepper
    • 2 tbspsoy sauce
    • 1 tbspchilli powder
    • 1 tspgarlic powder
    • 200 mlcooking oil
    • 1 pc(s)egg

Making the batter

  1. Get a bowl, add a tablespoon of corn starch, 2 tablespoons of soy sauce, crack an egg and seasonings; salt and pepper. Mix it well.

Marinate the chicken

  1. Get a piece of chicken breast. Cut the chicken breast, and butterfly them by cutting them in half horizontally. It’s important to smash the chicken breast with the backside of a knife. The function is to make it thinner and tender.

  2. Mix the chicken with the batter until all covered. Put them in the fridge, and marinate for 30 minutes.

Making the fried chicken

  1. Get a bowl, put the tapioca flour, and add a teaspoon of salt. Mix it well.

  2. Take out the chicken from the fridge. Mix the chicken with the tapioca flour. put the chicken in the tapioca flour, and coat well. Shake off excess flour.

  3. Get a pan and pour the cooking oil. Turn on the fire with medium heat. Deep fry the chicken. The cooking oil temperature should be about 350 degrees F (175 degrees C).

  4. Flip it a few times until golden brown and cooked. Approximately 6-8 minutes. Take it out from the pan and set it aside.

  5. Let the chicken rest for a while. Now we can prepare the spicy powder. Get a small bowl, and add a tablespoon of chilli powder, mixed with garlic powder and salt. Mix it well.
  6. After the chicken is cooked, then move it to a plate. Cut it into a few pieces, and sprinkle the spicy powder on the top. Now, Taiwanese fried chicken is ready to serve!
