Mochi is probably one of the most popular Japanese desserts in the world. With its chewy and soft texture, it’s such an enjoyable sweet snack to eat.

Many countries all over the world have their take on mochi, but the main ingredient has always been glutinous rice flour, white sugar and water.

For this recipe, I wanted to make a more authentic mochi with traditional Japanese flavours. Which is why I’m going to show you how to make matcha mochi with Anko filling, which is Japanese red bean paste.

In most cases, you can purchase red bean paste at any baking store, which is what I’ve done, but you can always make some yourself at home.

This mochi recipe is super versatile, you can choose to make it with matcha powder or plain. You can also use this recipe to make mochi ice cream as well as mochi bites, the possibilities are endless!

Notes*

*You can use rolling pins to flatten the dough. *You can replace the filling with basically anything you want. *Adding the vanilla is optional but it would make the mochi more fragrant.

ingredients

  • Red Bean Matcha Mochi

    • 65 gramglutinous rice flour
    • 45 gramsugar
    • 0.13 tspmatcha powder(for mixing)
    • 120 mlwater
    • 0.13 tspvanilla paste
    • 180 gramred bean paste
    • cornstarch(as needed, to dust)
    • matcha powder(as needed, to dust)

Red Bean-Matcha Mochi

  1. You can prepare the red bean paste weighing them into 6 equal portions (30 grams) and shape them into balls. Set it aside.

  2. In a heat-proof bowl, add your glutinous rice flour, sugar and matcha powder.

  3. Using a whisk, mix it together until well combined. Finally, add water and vanilla then mix until fully incorporated.

  4. Prepare the steamer and steam for 15 mins. or until the mochi is solid to the touch on low heat.

  5. When the dough is done, with a nonstick spatula, knead it until the dough is elastic and bouncy.

  6. Heat cornstarch on a pan on the lowest heat, for 1 minute.
  7. In a flat pan or surface, dust the surface with cornstarch until covered.

  8. Add the dough to the coated surface and dust the top with more cornstarch. While still warm, carefully flatten with your hands until evenly spread out, about 1 cm. thick.

  9. Using a scraper or knife, divide the dough into 6 equal pieces.
  10. Dust some cornstarch on your hands to prevent the dough from sticking to your hands. Now shape the dough into round circles by flattening and pinching motion.

  11. Add the red bean paste balls to the dough and close the dough by pinching to make a sealed ball. Dust off any excess starch.

  12. Dust with matcha powder to finish it off and enjoy!
