Pao de Queijo is a type of bread originated from Brazil. This bread is one of the most common snacks you can find in Brazil, with its main ingredient being cheese.

What I love about this bread is that it’s not a typical soft bread but rather a chewier one. So what gives this bread its chewiness? Tapioca flour. Yes, not wheat but tapioca flour. This is a really great recipe for those who have gluten-free diets and restrictions. This recipe also doesn’t have any yeast, kneading or proofing involved.

This bread is super light, crispy and chewy! Super delicious and super simple to make. You can make as many as you want or whatever size you want.

You can also use any type of dry cheese such as parmesan, swiss, gouda, etc. But the type of cheese we’re using is cheddar for this recipe. The reason why is because I think cheddar usually goes with everything and it’s probably one of the most common and subtle cheeses to use in your baked goods.

ingredients

  • Basic Dough

    • 160 gramtapioca flour
    • 2 tbspmilk powder
    • 0.5 tspsalt
    • 0.5 tspbaking powder
    • 70 gramcheese(grated)
    • 2 tbspvegetable oil
    • 1 pc(s)egg yolk
    • 80 mlwater
    • 40 gramcheese(diced)
    • vegetable oil(as needed)

Pao De Queijo

  1. Preheat the oven to 160 degrees Celsius.
  2. Separate the yolk and egg whites to get the yolk.
  3. Take the cheese (70 grams) and grate it.

  4. In a bowl add tapioca flour, milk powder, salt, baking powder, grated cheese, vegetable oil (2 tbsp), yolk and water together.

  5. Using an electric mixer, mix all the ingredients on low until everything is fully combined. When everything’s combined, take the speed up to a medium and keep mixing until a dough is formed.

  6. Cut the cheese (40 grams) into small diced cubes and add to the dough. Mix it in with a spatula roughly.

  7. Wet your hands with oil to prevent the dough from sticking to your hand. Take a measure of 1 tablespoon and scoop the dough into your hand. Then roll the dough to make a ball.

  8. Place the doughs onto a baking tray and make sure to give about 3 cm space in-between each dough.

  9. Bake the dough for 30 minutes or until slightly golden on top.
