Making bread has been such a stress reliever for me this past month. I see many videos on Instagram, Youtube, and Tiktok that’s helped me develop my love for bread-making.

Recently I came across this braided shape of bread and I thought about how fun it would be to make that recipe. I brainstormed and thought about so many flavour options I could make with it and decided on honey.

I’ve never made a recipe on honey before and I thought this would be a great flavour to make for braided bread.

Honey is practically a popular flavour and natural sweetener, there are no questions about that, but what’s great is that honey has many health benefits too. For those of you who are a little health-conscious but want something sweet, honey is a great alternative for regular white sugar. Not only does it taste good but it’s filled with lots of vitamins, minerals, antioxidants and can even help boost immunity too.

I wanted this bread to have a more stranded texture in the middle. This means that when you pull apart the bread, it will be more strand-like. And to achieve this, I shaped the dough into rolls and rolled them, and finally braid them.

Keep in mind that these butter braids contain a lot of honey so it will be pretty sticky to work with. And as you know me, you don’t need any electric mixers to make this.

Even though some people might not like to knead the dough by hand, I think it’s a great way to get that amazing bread texture. With your hand, you can always have more control and it’ll be extremely hard to over-knead the butter braids. You can always impress people by knowing that you did everything by hand!

These butter braids are great to eat as a snack and very fun to eat. They’re super tender, fluffy and soft. You can always add more honey for toppings/dips and some butter too.

Additional Notes from Author:

  • You may want to look up “how to braid” in case you’re still confused. It’s the same as braiding hair.
  • Your egg wash is usually 2:1 ratio (2 eggs: 1 milk) so you can always customize the amount.

ingredients

  • Bread Dough

    • 15 mlmilk(in a warm condition)
    • 25 gramhoney
    • 2.8 gramyeast
    • 1 pc(s)egg yolk
    • 160 grambread flour
    • 2 gramsalt
    • 18 gramsugar
    • 28 grambutter(in a room temprature)
    • 10 gramflour(as needed, for dusting)
    • 5 grambutter(as needed, for brushing)
    • 10 grambeaten egg(as needed, for egg wash)
    • 5 grammilk(as needed, for egg wash)
  • Honey Glaze

    • 25 grambutter(in a room temprature)
    • 25 gramhoney

Making the Dough

  1. Put the milk in a bowl and heat it in the microwave at 300 watts for 1 minute or until 100 degrees celsius.
  2. Add honey, yeast, and yolk to the milk. Whisk until everything’s fully incorporated.

  3. In a bowl, add bread flour, sugar and salt. Mix until combined.

  4. Make a well inside of your bowl of dry ingredients and add the wet ingredients.

  5. Use your spatula and mix until it forms a tacky dough.

  6. Cover the bowl with plastic wrap and rest the dough for 20 minutes.

  7. Now add the butter you prepared for the bread dough and mix again.

  8. Place your dough onto a work surface and knead the dough until smooth. Shape it into a ball.

  9. Take the butter you prepared for brushing and brush the bowl with it (the softened butter).

  10. Place the ball of dough in the bowl and cover with plastic wrap. Let it rise for 1 hour or until doubled in size.

  11. Punch your dough to get rid of any large air pockets.

  12. Shape the dough into a ball and weigh it.

  13. Divide the dough into 6 equal parts.

  15. Take some plastic wrap and cover the top of the dough and let it rest for 15 mins.

Making the glaze

  1. Add butter and honey to a bowl and mix it with a spoon.

Continue Making the Dough

  1. When your bench rest is over, dust your dough with some flour and flatten them.
  2. Using your fingertips, spread the dough out to make it a rectangle.

  3. Dust some flour on your hand and roll and stretch the dough to make them longer (About 15 cm long).

  4. Take 3 pieces and take one end, and pinch them together. Now you have 3 sections: left, right, and middle. Now take the right section over the middle, the left section over the middle and middle section to the right. Continue this pattern until you reach the end. Pinch the ends together and tuck them under. Do this with the remaining 3 pieces.

  5. Prepare your baking tray and place baking paper/mat on it.
  6. Place the dough on your baking tray and cover with plastic wrap. Let it rise for 1 hour.

  7. Preheat the oven to 230 degrees celsius.
  8. Add beaten egg and milk and mix. Brush the egg wash on your dough until fully covered.

  9. Bake the braids for 15 minutes.

  10. Right out of the oven, take your honey glaze and brush generously on your braids until fully covered.

  11. Now you can enjoy this freshly warm out of the oven with your favourite cup of tea or coffee!
