Fried calamari is one of the most popular food in the world. Calamari itself is the culinary phrase for squid-based foods. It's no wonder since the term calamari comes from Italian, which means "squids". As I mentioned before, fried calamari is a tasty food that has recently gained popularity in America and other countries. As a result, you can easily find it in most restaurants. But on this opportunity, I would like to share a recipe for fried calamari served with Balinese Sambal Matah.

That's right. In this recipe, I will show you both the fried calamari recipe as well as the Sambal Matah recipe. In case you didn't know, sambal Matah is an Indonesian Sambal that originates from Bali. The several spices it includes will give your calamari a fresher, spicier flavour.

You may easily follow the instructions in the calamari recipe I made. But first, be sure to get fresh or frozen squid rings at your favorite grocery store. And if you already have all the ingredients in your hand, let's get started with the first step.

  • Ingredients for the Sambal Matah

    • 4 pcslime leaf
    • 1 pc(s)lemongrass
    • 1 pc(s)garlic
    • 2 pcsshallot
    • 2 pcsred chilli
    • 1 tsplime juice
    • 1 tspsalt
    • 1 tspsugar
    • 1 tsppepper
    • 1 tspshrimp paste
    • 50 mlcooking oil
  • Ingredients for the Fried Calamari

    • 100 gramsquid rings
    • 100 gramall purpose flour
    • 150 grambread crumbs
    • 1 tspsalt
    • 1 tsppepper
    • 1 tspegg
    • 200 mlcooking oil

Making the Sambal Matah

  1. Prepare the main ingredients such as lemongrass, lime leaf, lime juice, shallots, garlic and red chillies.

  2. Slice them into small pieces, and squish the lime. For the lemongrass, cut in the middle into two parts. You can throw away the upper part. We just need only the lower part and you can slice it. Add the shrimp paste and add seasonings; salt, pepper and sugar. Mix it well.

  3. Get a pan, and pour 50 ml of cooking oil. Turn on the fire with medium heat. Wait for the oil until hot. Approximately 4 - 5 minutes. Then, pour the hot oil into the bowl. Mix them all together.

Making the Fried Calamari

  1. Get the squid rings. If you buy fresh squids, you must wash them first, take out the head and bones, peel out the skin and cut them into rings. Add seasonings; salt and pepper. Mix it well.

  2. Get a bowl of all-purpose flour. Mix them well.

  3. Get a bowl, crack an egg and mix it well. In this part, we have to do it one by one. Put a piece of squid rings, and mix it with the egg.

  4. Coat the squid rings with the bread crumbs. Do it until the squid rings are finished.

  5. Get a wok, and pour the cooking oil. Turn on the fire with medium heat. Deep fry the squids until golden brown. Approximately 4 - 5 minutes. Take it out from the wok and set it aside.

  6. Put the calamari on a plate and put the sambal matah on the side.Calamari with Sambal Matah is ready to serve!
