ingredients

  • Egg Foo Young

    • 3 pcsegg
    • 100 gramcabbage
    • 70 gramcarrot
    • 70 gramgreen bean
    • 25 gramspring onion
    • 100 gramshrimps
    • 100 grambean sprouts
    • 1 tspsalt
    • 1 tsppepper
    • 1 tbspoyster sauce
    • 2 tbsptapioca flour
    • 1 tspbaking powder
    • 200 mlcooking oil
  • Sauce

    • 60 gramonion
    • 60 grampaprika
    • 1 tbspcornstarch
    • 4 tbspketchup
    • 1 tspsalt
    • 1 tsppepper
    • 1 tspsugar
    • 2 tbspcooking oil
    • 1 tspgarlic(minced)
    • 200 mlwater

instructions

Making the omelette

  1. Slice all veggies and cut the carrots into small cubes.

  2. Get a bowl, and crack the eggs add salt, pepper, oyster sauce, tapioca flour, baking powder, shrimps and all the veggies. Mix it well.

  3. Get a wok, pour the cooking oil and turn on the fire with medium heat.
  4. Fry the eggs for approximately 4-5 minutes. You can flip it a few times. I suggest you close the wok with a lid to cook through the inside.

  5. After the frying process is done, you can turn off the fire and set aside the omelette.

Making the sauce

  1. Cut the onion and paprika into slices.

  2. Put a tablespoon of cornstarch in a cup or small bowl, and mix it with 50ml of water.

  3. Get a pan and turn on the fire with medium heat and add oil. Stir fry the minced garlic until fragrant.
  4. Pour the 100ml water, put the onion, paprika, ketchup and give some seasonings; salt, sugar and pepper. Mix it a well little bit for around 1 minute just to make sure the paprika and onion are cooked.

  5. Pour the cornstarch bit by bit into the sauce. Stir it until the sauce thickens and after that, you can turn off the fire.

Garnishing

  1. Boil the water until it bubbles and cook the bean sprouts for around 20 seconds and then turn off the fire. Strain the bean sprouts and set aside.

  2. cut the omelette into a few pieces, mine was into 4 pieces. Put the sauce and the bean sprouts on the top of the eggs. Here we go, Egg foo young is ready to serve! You can enjoy it with rice.
