Hello everyone! For those of you who aren't familiar with the word 'croquette' in this recipe, you might be asking; What is a croquette?
Croquette is a savoury fried dish. Most commonly, the shapes are ovals or rounds, and have the fillings consist of ground beef, fish, or vegetables that have been coated with breadcrumbs and deep-fried. This food is quite famous and has many versions. For example, in Japan it is called "korokke" or in Korea it is called "goroke", each country has a different name and taste. This food is a side dish or can be eaten as a snacks or side dish.
In this chicken croquettes recipe, I use chicken breast, carrots, shallots, garlic, spring onion, salt and pepper for the filling. I also added mayonnaise to make it taste a little sour. I add milk to this recipe to make the potato texture softer and tastier. Overall, the taste of this chicken croquettes will be savoury and crunchy but soft inside.

In this recipe, I will guide you to shape the chicken croquettes into a ball-shaped, but you can also make it long or oval, make it bigger or smaller. But it might change the final amount you will get. While with the amount of ingredients we used in this recipe, you can make about 18 pieces of chicken croquettes. The good news is; no matter how much chicken croquettes you have, you can save some in the freezer to fry it another time.
Notes*
- When you add mayonnaise, make sure the fire is off.
- When you make a ball shape, you can wear plastic hand gloves and grease the hand gloves with a bit of cooking oil. To make the work easier.
- To get the best result, I suggest you put the croquette in the fridge for a minimum of 30 minutes before you fry the croquette. It makes the breadcrumbs stick well to the skin.
