A festive yet simple and easy recipe to make for Christmas is: candy cane cookies! They’re delicious and people of all ages will love them.

Candy canes are the popular cane-shaped candy that is often associated with Christmas. Traditionally, colours are white with red stripes, but nowadays, it has been assorted into all kinds of colour mixes.

One thing to remember about these candy canes is that their original flavour is peppermint flavour. So, if you want to taste the authentic flavour of candy canes, make sure you purchase the peppermint flavoured one!

THE HISTORY OF CANDY CANES

Candy canes, believe it or not, were not real. It was only mentioned in a few folklore a couple of centuries ago. From old Christmas time stories to nursery rhymes, these candies became popular as a fantasy product that finally came to live just a decade ago in the 1920s.

Candy canes are usually given to children during Christmas time. Since candy canes look so cute, they are also used as Christmas ornaments by hanging them on Christmas trees.

CANDY CANE COOKIES

Instead of enjoying them just as candies, I thought to make them as a filling for Christmas cookies. These candy cane cookies have a similar look to chocolate chip cookies, except that it’s not made with any brown sugars and that the filling is made out of crushed candy cane.

The flavour goes so well together as the base of the cookie itself is a vanilla cookie and you get little crunch bites of the peppermint candy canes to go along with it. Not only does it taste great, it looks amazing too!

Tips that might be useful:

  • You can crush the candy canes with a food processor but make sure it’s strong enough to handle.

ingredients

  • for the Candy Cane Cookies

    • 15 gramcandy canes
    • 30 gramunsalted butter(in room temperature)
    • 38 gramcastor sugar
    • 0.25 tspvanilla extract
    • 20 grambeaten egg
    • 1 pinch(es)salt
    • 80 gramall-purpose flour
    • 0.13 tspbaking powder
    • 0.25 tspbaking soda
    • 10 gramcornstarch

Make the candy cane cookie dough

  1. Preheat the oven to 175 C.
  2. Place the candy canes in a ziplock bag and crush them with your rolling pin until it forms little shards of candy.

  3. In a bowl, add unsalted butter, castor sugar and salt. Whisk with an electric mixer until nice and fluffy.

  4. Add the beaten egg and vanilla extract and whisk again until fully combined.

  5. In another bowl, combine all-purpose flour, cornstarch, baking powder and baking soda. Mix together with a spatula until fully combined. These will be your dry ingredients.

  6. Gradually fold in the dry ingredients until about 75% mixed in.

  7. Add the crushed candy canes to the dough and fold again until everything is fully incorporated.

  8. Take a baking tray and place baking paper or baking mat on top. Take about a handful of your cookie dough and shape into a round puck.

  9. Bake the cookies for about 12 mins. or until the bottom of the cookies starts to look golden brown.

  10. Let it cool for 10 mins. before serving and enjoy it with a glass of milk!
